Salmon with Lemon-Cilantro Vinaigrette

  • 1/2 cup fresh cilantro, chopped

  • 2 scallions, thinly sliced

  • 3 tbsp olive oil

  • 2 tbsp sea salt

  • 1 tsp garlic powder

  • 1/4 tsp pepper

  • 3/4 lemon, juiced

  1. Heat 1 tablespoon of oil in a pan over medium-high heat.

  2. Season salmon with paprika and pepper, and cook 2-4 minutes per side to desired doneness.

  3. Combine cilantro, scallions, 3 tablespoons lemon juice, and 2 tablespoons olive oil.

  4. Serve the cilantro vinaigrette over salmon.
