Radicchio Orange Salad

Ingredients

  • 2 small heads radicchio, shredded

  • 2 medium oranges, peeled and chopped

  • 4 scallions, chopped

  • 2 Tbs olive oil

  • 2 Tbs balsamic vinegar

  • 1/2 tsp maple syrup

  • 1 tsp Dijon mustard

  • 1/2 tsp salt

  • Pepper, to taste

  • 1/4 cup pistachios, shelled


Instructions


Prep

  1. Shred and wash radicchio.

  2. Peel and chop oranges.

  3. Chop scallions.

  4. Remove shells from pistachios.


Make

  1. Add radicchio, oranges, and scallions to a large salad bowl.

  2. Whisk together oil, vinegar, maple syrup, mustard, and salt. Pour on salad and toss well. Season with salt and pepper.

  3. Toss in pistachios just before serving.
