Ingredients
4 eggs
8 egg whites
1 pint cherry tomatoes, halved
4 cups spinach, chopped
1 cup basil, fresh, chopped
1/4 cup kalamata olives, pitted and chopped
Salt, to taste
Olive oil spray
Black pepper, to taste
Instructions
Prep
Halve tomatoes.
Chop spinach, basil, and olives.
Make
Whisk together eggs and set aside.
Spray non-stick skillet/griddle lightly over medium heat. Add tomatoes and sauté until they are soft. Add spinach and basil and sauté until greens wilt (less than 2 minutes).
Stir in olives.
Remove vegetables from pan and set aside.
Add enough egg mixture for one omelet. Cook over medium heat until firm. Add 1/4 of the vegetables on one half then fold over. Season with salt and pepper.
Remove from pan and keep covered. Continue with the remaining omelets.
