Ingredients
1 ½ lb shrimp, peeled and deveined
2 Tbsp Creole seasoning
2 Tbsp olive oil
2 zucchini, chopped
1 red bell pepper, chopped
1 red onion, chopped
1 lb green beans, snapped and cut into 2-inch pieces
Directions
Prep
Toss shrimp with 1 tablespoon of Creole seasoning and let stand while preparing the vegetables.
Chop zucchini, red bell pepper, red onion, and green beans.
Preheat oven to 375°F (190°C).
In a large bowl, toss all vegetables with shrimp, olive oil, and the remaining tablespoon of Creole seasoning.
Line a sheet pan with foil and a sheet of parchment paper for easy cleanup.
Spread the shrimp and vegetables evenly on the lined sheet pan.
Bake for about 20 minutes, or until shrimp is cooked through and vegetables are tender.
Serve warm with brown rice or cauliflower rice.
