Creamy Mediterranean Skillet Chicken

Ingredients

  • 1 small onion, sweet, chopped

  • 3 cloves garlic, minced

  • 1/2 cup sun-dried tomatoes, chopped

  • 2 tbsp olive oil, extra virgin

  • 1 ½ lb chicken thighs, boneless, skinless

  • 1 tsp black pepper

  • 1/2 tsp sea salt

  • 1 tsp thyme, dried

  • 1 tsp oregano, dried

  • 1 tsp cumin, ground

  • 1/2 cup chicken broth, reduced sodium

  • 3/4 cup coconut yogurt, plain

  • 1 cup fresh spinach

  • 4 lemon slices, thin wedges


Directions


Prep

  1. Chop onion/mince garlic/chop sun-dried tomatoes.


Make

  1. In a large skillet, sauté chopped chicken thighs in 1 tablespoon olive oil until browned on all sides. Remove from pan and set aside.

  2. Add 1 tablespoon oil to pan and sauté onion until translucent, about 3-4 minutes. Stir in garlic, sun-dried tomatoes, oregano, thyme, cumin, black pepper, and salt and cook for another 1-2 minutes until fragrant.

  3. Return chicken to pan, add broth, and coconut yogurt. Simmer over medium-low heat for 20 minutes until chicken is cooked through and tender.

  4. Stir in spinach and cover pan until wilted. Top with parsley and serve with lemon.
