Ingredients
1/4 cup walnuts, crushed
2 cups Greek yogurt, full-fat
1/2 cup peanut butter, creamy
2/3 cup chocolate chips
2 Tbs maple syrup
Salt, to taste
Instructions
Prep
Line a shallow baking pan with parchment paper.
Crush walnuts.
Whisk together yogurt, peanut butter, maple syrup, and a pinch of salt.
Make
Melt the chocolate chips with coconut oil in a microwave-safe bowl for 1 minute – whisk until creamy. If chips have not melted, continue to microwave for 15-second intervals until liquified.
Spread the yogurt peanut butter mixture over the parchment paper in the baking pan.
Cover with crushed walnuts and drizzle with melted chocolate.
Place in the freezer for at least 3-4 hours to firm.
Remove from the freezer and break into pieces using a chef’s knife.
